What is Stroganoff?
Stroganoff is a dish made with noodles, or in some cases even rice, with a sour cream sauce base, meat, and mushrooms. In this ground beef stroganoff recipe, I include the sour cream, mushrooms, and beef, or course, along with some flavorful twists such as Worcestershire sauce.

What is the origin of Stroganoff?
Stroganoff has it’s roots in 19th-centuary Russia. In fact, today stroganoff has been adopted by many different countries and has been turned into a international comfort food. I recently learned, from my husband who is a Brazilian National, that they even have a variation of stroganoff back in Brazil.

Why use ground beef in Stroganoff?
Excellent source of protein– There’s about 65 grams of protein in 1 pound of ground beef.
Easy to cook with– In my opinion, ground beef is one of the easiest meats to cook with. Making ground beef stroganoff a great recipe for beginners!
Very accessible– Let’s just put it this way, I have never been to a grocery store that didn’t have ground beef.

Which ground beef is best for making Stroganoff?
85/15 ground beef– I prefer ground beef that is 85% lean meat and 15% fat. Ground beef that is 85/15 tends to have a rich flavor without being too greasy.
Grass-fed + finished and pasture-raised– If you don’t already know, beef that’s labeled grass-fed means that the cattle were able to roam around and have a diet of grass. Having a grass-fed/finished diet is huge because the meat is more nutrient dense. Additionally, pasture-raised means that the cattle were able freely roam, giving them a better quality of life then conventionally raised cattle.
Locally harvested– I am all for supporting local businesses! Maybe see if you could find a farmer near you to get beef from. Locally sourced meat tends to be fresher and better quality.
Organic– Organic ground beef certainly is great! However, it’s not a must have quality.
Lastly, just know that it’s okay to just get standard ground beef from the grocery store. If you can get/afford beef that’s a little better quality great! If not, I understand that meat is expensive, so working with what you’ve got is fine too! 🙂
Why I love this Ground Beef Stroganoff Recipe
I asked my husband what he thought of my stroganoff recipe and he said, “It tastes pretty good.” Now one thing to know about my husband is that he says it like it is. So he’d certainly let me know if the recipe needed some adjustments!
However, I love this recipe because it comes together in less then an hour. It’s also filling and full of nutritious ingredients like bone broth, grass-fed beef, and more.

How Do I Make Ground Beef Stroganoff More Flavorful?
One of the ingredients that I like to include is Worcestershire sauce. Think of Worcestershire like soy sauce’s tangy cousin. Additionally, Dijon mustard add an extra layer of tang. But don’t worry, this tang is balanced out by the creamy sour cream.

Another nice thing about ground beef stroganoff is that it is very customizable.

egg noodles for rice or another type of noodle
ground beef for skirt beef or beef tips

How to make dairy free Ground Beef Stroganoff
Making dairy free ground beef stroganoff is super simple. Just replace the regular sour cream with dairy-free sour cream in a 1:1 ratio.

Pan for boiling water
Skillet or frying pan
Measuring cups and spoons

Wooden spoon(s)- or something to stir with
Ingredients for Ground Beef Stroganoff Recipe
1 pound of ground beef
1 small onion, or 1/2 a medium onion, diced
2-3 cloves of garlic, minced
8 ounces of cremini mushrooms or white button mushrooms, sliced
1 tablespoon of olive oil for greasing the pan, plus more for putting on the noodles, optional
2 tablespoons of all-purpose flour
2 cups of beef broth
1 tablespoon of Dijon mustard
1 teaspoon of paprika
1/2 teaspoon of dried rosemary
1/2 teaspoon of garlic salt or to taste
1 teaspoon of Worcestershire sauce
8 ounces of sour cream
12 ounces of egg noodles
Salt and pepper to taste
Parsley, parmesan cheese, or bacon bits to garnish, optional

How to Make Ground Beef Stroganoff
Begin by bringing a pot of salted water to a boil for the noodles. Cook the egg noodles according to the package, drain, toss in a little olive oil if desired, and set aside.

Next, grease your frying pan or skillet with olive oil. Add the onions and cook on low-medium heat for a few minutes until they are golden. Then, add in the garlic for a couple more minutes.

And then, add the beef and cook it until it’s brown. Next, add the mushrooms.

Once the mushrooms have released much of their moisture and have become smaller, add in the flour. Stir so that the flour evenly coats everything and let cook for about a minute.

Then, stir in the beef broth, Dijon mustard, paprika, rosemary, garlic salt, Worcestershire sauce. Let simmer for a few minutes.
Next, add in the sour cream and stir until fully combined. Let simmer for a few more minutes, but make sure that the sauce doesn’t boil.

Finally, add in salt and pepper to taste and stir. Serve the ground beef stroganoff over noodles and garnish with parsley, parmesan cheese, or even bacon bits.

Storing your stroganoff
Refrigerator- The beef stroganoff can be stored for up to four days in the refrigerator in an air-tight container.
Freezer- I recommend freezing the stroganoff sauce and noodles separately. Be sure to freeze the stroganoff in a freezer bag or freezer safe air-tight container.
