Begin by bringing a pot of salted water to a boil for the noodles. Cook the egg noodles according to the package, drain, toss in a little olive oil if desired, and set aside.
Next, grease your frying pan or skillet with olive oil. Add the onions and cook on low-medium heat for a few minutes until they are golden. Then, add in the garlic for a couple more minutes.
And then, add the beef and cook it until it's brown. Next, add the mushrooms.
Once the mushrooms have released much of their moisture and have become smaller, add in the flour. Stir so that the flour evenly coats everything and let cook for about a minute.
Then, stir in the beef broth, Dijon mustard, paprika, rosemary, garlic salt, Worcestershire sauce. Let simmer for a few minutes.
Next, add in the sour cream and stir until fully combined. Let simmer for a few more minutes, but make sure that the sauce doesn't boil.
Finally, add in salt and pepper to taste and stir. Serve the ground beef stroganoff over noodles and garnish with parsley, parmesan cheese, or even bacon bits.
