Begin by melting peanut butter, maple syrup, and coconut oil in a sauce pan over low heat until smooth. Then, add in the vanilla extract and salt.
Next in a separate bowl, mix together the oats, shredded coconut, and chia seeds. Then add the oat mixture to the peanut butter mixture in the sauce pan and mix everything together well.
Let everything cool slightly, about 5 minutes, and then mix in the chocolate chips.
Then, line pan with parchment paper and press the mixture down into the pan.
Optional- Top the mixture with extra chocolate chips and/or shredded coconut if desired. If adding additional chocolate chips or shredded coconut, gently press them into the mixture.
Next, place the pan in the refrigerator to cool for at least two hours.
Lastly, cut into rectangles or squares and enjoy!
